Cheesy Corn Pudding

CHEESY CORN PUDDING



Try this delicious Pudding, in México we call Flan the traditional is without cheese but there is different kinds so this time I wanted to add not just cheese but corn, it is delicious if you cant find corn you can skip and add only cheese you will love it also. It is easy to prepare just be really careful with the melted sugar and need to take care of close very well the mold with aluminum foil because must not enter water. if water enter it will not cook the pudding. so be extremely careful with this, also always review that water dont evaporate always add when necessary. should be on the middle or bit less than the middle. at medium heat. This recipe is for 8 persons, I use small mold so I can fill 2.

Ingredients

5 Eggs.
200gr Cream cheese.
380gr Condensed milk.
3-4 Cup of Corn Kernels.
1 3/4 Cup of Milk.
2 tsp. of Vanilla.
1/2 Cup of sugar..




How to prepare:

1.first thing to do is heat 1/2 cup of sugar, you can use a pan and then put the melted sugar in the mold, but if you have a mold that you can put directly in the stove you can put is easier. When the sugar is liquid completely melted add in the mold and cover all the walls and put aside.
2. In the blender add 200gr of cream cheese, the can of condensed milk, 4 cups of corn kernels, eggs and 2 teaspoon of vanilla and mix all ingredients. In the video I made on different way because I don't have a blender and also don't have a big bowl where I can mix all ingredients.
3. In the mold, the sugar melted is already cold, add the batter.
4. If you have a mold to make pudding or flan just close very good, if not, cover the mold with aluminum foil, and seal completely carefully. This step is very important because must not enter water to the pudding while is boiling in water bath.
5. In a pot or pan carefully add the mold already sealed with aluminum foil, add water until the middle of the mold or less than the middle and put in medium heat. you can check the video.
6. After 20 min check and if needed add water, carefully always to not enter water to the pudding. Review and add water when necessary.
7. The time that it takes was 1:00 hour with 5 min in medium heat. But always review with a toothpick, it should be moist but not dirt. If need more time just cover very well again and put to boil in water bath.
8. when is ready put to cool down for about 1/2 to 1 hour and then put on fridge for about 1/2 hour more, in my case I leave for 1 day because was tired of recording but you can take out in 1/2 hour.
9. To remove from the mold use a knife to separate the pudding from the wall of the mold and then with a plate like in the video flip and is ready.

Cheesy potato bites...

CHEESY POTATO BITES

Try this delicious cheesy potato bites, ideal snack for a movie day. Also you can eat with spaghetti. You will love it.



Ingredients.
3-4 Boiled potatoes
with salt to taste.
3 Ham slices.
4-5Green onion.
4-5 Spring of parsley.
Mozzarella cubes.
1/4 tsp. Mustard
1/4 tsp. Vegetable stock
powder.
1 Egg.
Wheat Flour.
Panko or breadcrumbs.



Dressing Ingredients.
10 Tbsp Mayonnaise.
3 Tbsp Ketsup.
2 Tbsp of sriracha sauce.
1/2 tsp of sesame oil.
Drops of lemon.



How to prepare:
1. Boil from3 to 4 potatoes with salt to taste.Let it cool down.
2. Fry in a pan the head of the green onions and add the ham. (If you dont want to add ham you can skip this step, but it gives a very nice flavor).
3. In a bowl with boiled potatoes at room temper, add pepper to taste, 1/4 of teaspoon of vegetable stock powder, 1/4 teaspoon of mustard, springs of parsley finely chopped, the springs of the green onion and mix.
4.Make small balls and fill with mozzarella cheese.
5.To the refrigerator for 1 hour, because I was recording the video I put on the fridge for about  20 to 30 min. It was also perfect. This tip is in case you don't have time.
6. Once cold, it is time to prepare, roll the balls in wheat flour, then add in the egg and at the end roll it in panko or bread crumbs.
7.In a hot pan with oil or in a small pot deep fry the potato balls, but, if you are using as mi a pan, then fry until golden for one side and roll it with careful to not burn and to not broke each one.
8. For the dressing, you will need 10 tablespoon of mayonnaise, 3 tablespoon of ketchup, 2 tablespoon of sriracha sauce and 1/2 teaspoon of sesame oil. add drops of lemon and mix.
If you don't like sriracha sauce just substitute the quantity of sriracha with ketchup, also if you like you can add 1/4 of teaspoon of mustard.

Different and delicious Chicken in pistachio sauce

CHICKEN BREAST IN PISTACHIO SAUCE

Try this delicious chicken in pistachio sauce, it is very delicious... Is a different dish but very tasty... If you love pistachio you most try.



Ingredients:

Chicken:
Chicken Milanese. I use chicken breast cutting in milanese.
1/4 tsp. of salt or to taste.
Pepper to taste
1-2 Tbsp of Olive oil.
1/2 tsp. of thyme(I substitute with mix of fine herbs)




Pistachio sauce: 
1 Cup of pistachios.
1 Cup of cream.
3/4 - 1 Cup of milk.
1-2 Tablespoon of Goat cheese.
1/2 Onion.
5 Springs of coriander.
1 Mozzarella cheese cube
1/4 teaspoonful stock vegetable powder(Optional)

How to prepare: 
1. As a tip, I always wash the chicken with water, salt and lemon I leave for 1 hour.
2. I boil the potato with 1/2 teaspoon of salt. you can add salt to taste.
3. Marinate the chicken milanese with salt and pepper to taste add from 1 to 2 tablespoon of oilve oil and 1/2 tablespoon of thyme or mix of fine herbs. Leave with the marinate for 1 to 2 hours
4. In a teflon pan add just a bit of Olive oil and distribute with a napkin. Fry the chicken and put aside.
5. In the same pan add 1 Tablespoon of butter and fry the onion, after some minutes add the pistachios and fry for some minutes.
6. In the mixer add the pistachios and the onion already fried. Add 1 cup o cream and 3/4 or 1 cup of milk, add 1 or 2 tablespoon of goat cheese, 5 springs of coriander,1 small cube of Mozzarella and 1/4 of teaspoon of vegetable stock powder.Mix all ingredients.
7.In a pan put to heat the cream and when start boil add the chicken. Leave from 10 to 15 min in low heat and serve.

How to prepare Esquites (Corn Snack).

Esquites Delicious Corn snacks

Esquites is a delicious corn snack traditional from Mexico but not in all places you can find the ingredients to make it so tasty as it is..like the epazote or poblano Chilli.but.. If you want to try it...this is a delicious option... you will Love it... :)))




Ingredients:
4-6 Corn.
2 Tbsp. Butter.
1/4 of Onion.
1 Poblano or green Chilli (I use a small green and red bell pepper)
Epazote leaves (I use Chives springs).


For prepare:Cream or mayonnaise.
Chilli powder and sauce.
Lemon.



How to prepare:
1. In a pot add bit of oil and then butter... This is to prevent butter burn.
2.Add the onion chopped in cubes or into julienne as you prefer. In my case I chopped into cubes. Then fry some minutes.
3.Add Poblano or green chilli in stripes. In my case I use Green bell pepper and red bell pepper as you can see on the video. This is a great option that give a really good flavor to the esquites.. you can do in case you didnt find the chilli.
4. After fry for some minutes add the corn kernel and mix all ingredients.. you will start to smell the delicious corn mixed with the butter and peppers.
5. Add water covering the corn kernels. dont put too much... just to boil the corn.
6. When start boil add 1 teaspoon of salt and pepper to taste.
7.Add the springs of Epazote (Just in case you have it) it not.. like me.. you can substitute using spring chives finely chopped.
8. Let until boil and if require add a bit more of water.

Two delicious ways to prepare Tuna.

TUNA DIP AND TUNA SALAD.

Try this two easy ways to prepare tuna.. Both are easy, delicious and economic.. It will not take more than 10 min each to prepare... special for the moments you don't have time or just you don't want to cook. :))

















Tuna dip ingredients:
1 Can of tuna.
190gr of Cream cheese.
Coriander or parsley
leaves.
1 tsp. of Soy sauce.
Pepper to taste.
1 Tbsp. of Cream.
1 Tbsp. of Mayonnaise.



Tuna Salad ingredients:
1 Can tuna.
1-2 Tbsp of Mayonnaise.
1/4 of Onion finely chopped.
1 Tomato finely chopped
without seeds.
Springs of chives finely
chopped.
Lettuce leaves.
1/4 Cup Corn kernel.
1/4 Cup of Peas.
Pepper to taste.
1 tsp. Soy sauce.



Tuna Dip preparation:

1. In the mixer add cream cheese at room temperature, coriander or parsley, 1 tablespoon of mayonnaise and 1 tablespoon of cream. If you don't want to use mixer you can do manually just chop finely the coriander.
2.Add soy sauce and pepper to taste, add the mixture and mix with a fork
3.Add in a container to give it shape and let it cold for about 1/2 hour.
4. Serve with salad cookies or tortilla chips.

Tuna Salad preparation:

1. Add 1 teaspoon of soy sauce and pepper to taste.
2.Add the chives finely chopped, corn kernels, green peas, onion, tomato, lettuce and 1 tablespoon of mayonnaise, If you like you can add or less mayonnaise.
3. Mix all ingredients... and... Ready.. Easy and delicious.

Carrot cake with pecans.. You will love it.

CARROT CAKE



Surprise to your guest with this delicious carrot cake, I tried and tried carrot cakes but this is the recipe that I really love.. It is really tasty.


Ingredients:

Para el pan:
1 1/2 Cup of sugar.
2 Cups of wheat flour.
2 teaspoon of cinnamon.
3 Eggs.
1/2  Cup of Chopped and toasted pecans.
1 teaspoon of  Vanilla.
1 teaspoon of baking powder.
1 teaspoon of baking soda.
1/2 teaspoon of salt.
3/4 cup of oil.
3 cups of grated carrot.



Frosting covering:
1/4 Cup of butter (At room temperature)
200g. Cream cheese (At room temperature)
2 1/2 Cup Iced sugar.
1/2 teaspoon of vanilla.
Pecan toasted and chopped.



How to prepare:
1. First thing to do is toast the pecans in microwave oven or in the oven as you prefer. I did in oven and it takes for me about 3 min... you will notice the smell when is ready.
2. Finely chop the pecans and put aside.
3. In a bowl with strainer add the 2 cups of wheat flour, 1 1/2 cup of sugar, 2 teaspoonful of cinnamon, 1 teaspoon of baking powder, 1 teaspoon of baking soda, 1/2 teaspoon of salt. and mix.
4. Add to the electric mixer and start to mix, add the eggs, the oil and 1 teaspoon of vanilla, add the grated carrot and for last add the chopped pecans.. Mix for 3 minutes... you will notice the consistency of the mixture.
5. Grease and dust with flour 2 mold and add the mixture.
6.Oven pre-heated to 180C.
7.Put in oven the mixture and leave from 20 to 30 min. Check with toothpick and if the cake is reade. Let to cold.
8. In the electric mixer add 1/4 cup of butter at room temperature and star mix.
9. Add 200gr of cream cheese and 1/2 teaspoon of vanilla.
10. Add the 2 1/2 cups of iced sugar.
11. Remove from electric mixer. The frosty covering is ready.
12. Once cold the cake.. cover the 2 layers of the cake with the frosting cream and put in refrigerator for about 30 min.
13. After 30 min. decorate with the pecans.
14. Put in refrigerator for about 1 hour more and enjoy.💗💗

Tortilla in beans sauce... Mexican breakfast.. Easy and delicious.

TORTILLA BEANS SAUCE

What if this weekend you prepare for your family or for yourself this delicious tortillas in beans sauce.. is a Mexican breakfast and you will surprise when see how easy to make....




Ingredients:

2 Cup of boiled beans.
1/4 of Onion.
2 Bay leaves.
1/2 tsp. of Cummin.
1/4 tsp of Oregano.
1 little spring of Thyme
2 Avocado leaves.
1 Black pepper.
1 Dried Guajillo Chili.
1 Dried pasilla Chili.
Tortilla.
Fresh Cheese.
Cream.



How to prepare.

1. In a mixer add 2 cups of beans previously prepared.
2. Add 2 bay leaves, 2 avocado dried leaves, 1 black pepper, 1 tiny spring of thyme, 1/2 teaspoon of cummin, 1/4 of teaspoonful of oregano, 1 dried guajillo Chili, 1 dried Pasilla Chili.. You can add chipotle sauce or chipotle in a can as you prefer.
2. In a pan add a little bit of oil and fry the onion finely chopped until transparent.
3. Add the beans cream.
4. If you can get chorizo you can add if you like... to prepare you need to put little bit of oil in a pan and the fry the chorizo as you can see in the video. Dont put too much oil because the chorizo have already too much oil.
5. In a pan add enough oil to deep fry the tortilla.. is just like less than 1 min.. (This is an optional step, you can prepare with heated tortilla without passing in oil).
6. It is time to prepare.. Put the tortilla in the bean sauce.. then put in a plate and fill with cheese or if you like and get the chorizo you can fill with chorizo.. decorate with cream cheese and avocado.. or chorizo if you like.
Your tortillas in bean sauce are ready... Mexican breakfast so easy and delicious..Check out the video.. 😃😃

Easy snack for a party.. Creamy sausage

CREAMY SAUSAGE
You will have some visitors in your home and don´t know how to prepare or someone invite you to some party and you need to bring some snack... What about give it a try to this creamy sausage. Is really easy to make and you can serve with some cookies or tortilla chips.



Ingredients:

Ingredients:
1 Kg. of Sausages.
2 Onion.
3 Green Chili pepper.
1 Cup of cream.
1 Tbsp of Mayonnaise.
2-3 Tbsp. of Ketchup.
1-2 Tbsp. of Chipotle sauce.
2 tsp.of Soy sauce.
3 tsp of Worcester sauce.



How to prepare:
1. Cut into julienne the onions and in stripes the green chili, removing the seeds.
2. Cut the sausages.
3. In a pan add a bit of oil and when is hot add the onion. Fry and add 2 teaspoon of soy sauce and 3 teaspoonful of worcester sauce. Let it Fry until transparent.
4. Add the stripes of chili and fry until soft
5. Add the sausages and leave until lightly browned.
6. Add the cup of cream, 1 tablespoon of mayonnaise and mix..
7. Add 2 tablespoon of tomato sauce (Ketchup) and 1 tablespoon of Chipotle sauce.. This is to taste.. depend of how much you like chili in the food.
8. Mix well all ingredients and remove from heat.
9. enjoy with cookies or with tortilla chips..
Ready and easy to make.. Enjoy..😊

Sweet and delicious Sugared Donuts Cookies.

SUGARED DONUTS COOKIES.

This sugared donuts cookies are a recipe of my grandmother, she used to make when we were young, hope you enjoy as much I enjoyed when I was kid.



Ingredients:
 
1/2 Cup of Brown sugar.
225gr. of Butter.
1 tsp. Vanilla.
2 Eggs.
3 Cups of flour.
1/4 tsp. of salt.
1/4 tsp. of baking powder.
1 Cup of cornstarch.
Decorate:
Sugar.
Cinnamon.


How to prepare:
1. The butter should be to room temperature, the softer the better.
2. Add sugar and mix with the butter until get a creamy consistency.
3. Add the eggs, in this point, my grandmother prepare only with  yolks because the egg white she use to make a cover for a cake and then didnt  waste nothing. In my case, I decide to use the complete eggs to not waste the egg white but, if you prefer, you can do as my grandmother used to do. Using only yolks.
4.Add 1 teaspoonful of vanilla, it give a great flavor. mix perfectly all ingredients.
5. Add 1 cup of cornstarch and mix.
6.In other bowl mix 3 cups of flour and 1/4 of teaspoonful of baking powder and 1/4 of teaspoonful of salt.
7. Add to the mixture with buttjer and mix all with your hands until get a pliable dough as you can see on video, if needed add more or less flour.
8. Mix 1 1/2 teaspoonful of cinnamon and 1/2 cup of sugar.
9. Give shape to the Donut cookies as you can see on video and then roll it into the mixture of sugar and cinnamon... Add in a mold previously grease and dusted in flour.
10.Put in oven pre-heated to 200C and leave from 15 to 20 min.
11. Let it cold and enjoy with coffee or Tea.
