How to prepare Green bell pepper creamy soup.

GREEN BELL PEPPER CREAMY SOUP.

You will love this Green bell pepper creamy soup, is delicious and easy to make. Perfect to start the dinner on Christmas or new year's eve. also if you find Poblano chili and if you like just substitute the green bell pepper for the chili. The 3 Cheese I use for this recipe: Goat Cheese, Mozzarella Cheese and Cheddar Cheese. You can use the cheese you like the most or just one.




 Ingredients:

3 Green bell peppers (Substitute by Poblano Chili).
1 Corn.
1/4 Onion.
1 Cup of Milk.
Water (As needed).
3 Small cubes of cheese (I use goat cheese, Mozzarella Cheese and Cheddar Cheese).
1 Boiled potato.
Salt to taste.
Pepper to taste.
Vegetable stock powder.



How to prepare:

1. In a pan add bit of oil and fry the onion in stripes until lightly brown, then, add green bell pepper or poblano chili and at the end the corn kernels. Fry until the stripes of the chile are soft.
2. Add what you fry to the blender and add water not too much just covering the green bell pepper, add salt to taste and pepper to taste and vegetable stock powder. If you had from before vegetable or chicken stock add instead of water.
3. In a pan, add bit of oil and bit of butter. You add oil just because you don't want the butter burn.
4. Add Corn Kernels and fry for some minutes.
5. Add the Green bell pepper soup and leave in low heating, meanwhile, in the blender add the boiled potato and the cup of milk. Add bit of salt and pepper.
6. Add the potato you blend into the pan which contain the pepper soup that must be starting boiling.
7. Let it boil in low heat to mix the flavors and check if it is ok of salt. If needed add bit more.

Lime-Strawberry cold Cake.

LIME-STRAWBERRY COLD CAKE


Try this delicious Lime-Strawberry Cold Cake, is easy to make and delicious, perfect dessert if you don't have oven.Also you can substitute the strawberry and use the fruit you love the most, but the combination of lime and strawberries is amazing. The cookies I use for the cake here is called Marie cookies in México Galletas Marias  I don´t know in other countries how they call.But In supermarket there is always cookies in shape of square, long or round special for cakes like tiramisu you can substitute and about how much you should use it will depend of your mold in my case I use a mold of 22Cm Diameter and 6.5 Cm High and use a box of 450gr.Also If you can not find evaporated milk (unsweetened condensed milk) you can just use the cream and the condensed milk and lime. Lime is important to use because it will gives the consistency.

INGREDIENTS:
Marie cookies or cookies for make tiramisu cake. The amount will depend of your mold. in my case I use 450 gr.
380g/1Can Evaporated
milk or unsweetened condensed milk.
350g/1Can Condensed milk.
15 Strawberry(You can use your favorite fruit).
12 Pecans(Optional).
6-7 Lemons.
250g/1Box whipping cream.





How to prepare:

1. In the blender add 1 Can of Evaporated milk 1 can of condensed milk and 1 can of whipping cream Mix well.
2.Add slowly the juice of 6 or 7 lemons and mix again.
3. If you use a cake mold as I do, add baking paper to not stick to the mold and you can remove easily. If you use a crystal mold the is not necessary.
4. Add 1 layer of Marie Cookies or the cookies for cake that you find and then add the batter, add chopped pecan and strawberries or the fruit you like the most. Also if you don't want don't add any fruit. Will be also delicious
5.Optional you can put the cookies around inside the mold to have shape of cake. If not just add another layer of cookies and ingredients until finish.you can see the video for better information.
 6. When finish, put on refrigerator minimum 3 hours or until you see that have the desired consistency.
7. Enjoy your delicious cold cake. Easy to prepare and so delicious.

How to prepare Milk Caramel Atole, speacial for winter :)))

MILK CARAMEL ATOLE.





For this winter season  give it a try to this different and delicious  hot drink Milk Caramel Atole it is easy to make and perfect to pair with a delicious bread or homemade cookies. If is hard to find in the supermarket the Milk Caramel. Below the link of my homemade Almond Milk Caramel also you can do without almond it is also very delicious.


INGREDIENTS.
For 2-3 Cups:
3 Cups of Milk.
1/4 Cup of milk caramel.
1 Spring of Cinnamon.
1/2 Cup of water.
2 1/4  Tbsp. of Cornstarch.
12 Almonds.
For more cups:
1 Liter of milk.
1/2 Cup of Milk caramel.
3/4 Cup of water.
4 Tbsp of cornstarch.


How to prepare:

1.  Put the milk in a pot to heat with a spring of cinnamon.
2. Meanwhile prepare in 1/2 cup of water 2 or 2 1/2 tablespoon of Cornstarch and mix well.
3. At start boil  retire the milk of heating and add the milk caramel and mix. Put again to heat and continue mixing.
4.Add little by little the cornstarch.Before you add it mix again and don't stop stirring.
5. Add almond finely chopped and previously toasted in stove, it will take 5 min. or in microwave in 3 minutes.
6.  Keep stirring in medium heat for about 10 to 15 min. and will be ready. You can decorate with almonds.

Ready try your delicious Milk Caramel Atole.

Leftover rice fritters in green beans sauce.

LEFTOVER RICE IN GREEN BEANS SAUCE.

This day I bring you a dish economic and delicious. In México, at least in my house you always have beans and rice and we eat together when there is nothing else to eat. besides too much dishes we pair with rice so if you have leftover rice why you don't try to make something with it and prepare this delicious leftover rice fritter in greens beans sauce and pair with beans. A new version of beans with rice that you will love. If you can not find black beans you can do with other kind of beans.




Ingredients:
Rice.
1 Cup of breadcrumbs.
3 Tbsp Wheat flour.
1-2 Eggs.
5-6 Springs of coriander or parsley.
Pepper to taste.
1/2 Cup of Feta cheese.
1/4 Mozzarella Cheese
3-4 Spring of Chives.
1/4 Onion.
1 Garlic clove finely chopped


Green beans sauce:Green beans.
4-5 tomatoes.
1/4 tsp. Thyme.
1/4 tsp. Cumin.
Salt to taste.
Pepper to taste.
1/4 tsp. vegetable
stock powder.
1/4 of Onion.
1 Garlic clove.
1 Bay leaf



How to prepare:
1. In a bowl add the quantity of rice that you left or if you boil with salt and vegetable stock powder,
2. Add the parsley or coriander, the eggs, Feta cheese, mozzarella, chives, onion and garlic cloves finely chopped, pepper to taste. breadcrumbs and wheat flour.
3. Mix all ingredients.
4. Start to give it shape to the fritters, I use bit o water that helps me to not stick the rice in my hands.
5. Add on fridge for 15-20 min or in refrigerator for 30-40 min,
6. In a blender add 4-5 tomatoes, onion, garlic clove, thyme, cumin, vegetable stock powder, bay leaf, salt and pepper to taste and mix all.
7. In a pot add a bit of oil and add 1 garlic this is because it will give a really good flavor to the sauce and the remove it.
8. Using strainer, add the sauce to the pot and fry, let it boil in low heat to combine the flavors perfectly then add the greens beans and leave for 10 minutes more in low heat.
9. After 20 min remove the fritters from the fridge, it is time to fry. Add a bit of oil and add the fritters. Let it fry for about 3-4 min or until start to lightly brown and flip and do the same. Remove from the pan and add in plate with a paper to remove the excess of oil.
10. Serve the fritters and cover with the green beans sauce pair with a delicious beans in pot.

Homemade Almond Milk Candy.

HOMEMADE ALMOND MILK CANDY (CAJETA).

Milk candy or in México Cajeta or Dulce de Leche is a traditional sweet using in México, normally is with goat Milk but is hard to find so you can also use cow milk. If you don't want to put almonds you can skip that step, it is also delicious, The Cajeta, dulce de leche, arequipe or Almonds Milk Candy we use to eat with bread or cookies and also to make desserts.





Ingredients:

1 L. Milk.
30gr Almonds.
1 1/3 Cup of sugar.
1/2 tsp. Vanilla.
1/4 tsp. Baking soda



How to prepare:
1. In a cooking pot, add the milk and put to heat.
2. Add sugar, almonds, vanilla baking soda and mix.
3.During the process don´t stop mixing or leave because the milk can spill when boil and then you will not have your milk candy. Because of that you should be checking all the time and continually stirring.
4.If you put in high heat. you should be careful and reduce to medium or low or turn off if necessary if you see that start to go up. Just don't stop mixing. It takes 1 hour to make this delicious sweet. If you want also you can make in medium heat. Just it will takes more time.
5.After one hour you will notice that the color will change and also consistency. To check if its done use a plate and add 1 teaspoon of Milk candy if don't come together then means it is ready.
6. With this ingredients you can fill one jar of 500ml. if you want more for every liter of milk you need to add 300gr. of sugar aprox. and 30gr more of almonds.

Fresh and delicious Shrimp Stuffed Avocado

SHRIMPS STUFFED AVOCADO.

You have shrimps at home and want other way to prepare, try this delicious option, avocados stuffed with shrimp,it is very delicious, you just have to find the perfect avocado :))) to be amazing, if you do not find avocado you can only eat shrimp salad in any of the two options are delicious. You can also chopped in small cubes the avocado and add it to the delicious shrimp salad.



Ingredients:

Avocado.
500gr of shrimp.
2 tomatoes.
1/4 of Onion.
5-6 Springs of coriander.
5-6 Springs of chives.
Ketchup

 For the marinate:
12 Garlic cloves.
3 Tbsp Olive oil.
1/2 Orange.
Pepper to taste.
Salt to taste.
Fine herbs mixture or
vegetable stock powder



Parsley dressing:
5-6 springs of parsley.
1/2 Orange.
Pepper to taste.
1/4  tsp Paprika powder.
1/4 tsp Vegetable stock
powder.
130gr. Natural yogurt.



How to prepare:
1. The first thing to do is marinate and for this you will need to put 12 garlic cloves in the mixer or cut and add 2-3 olive oil, salt to taste and I use mixed herbs powder but also you can use vegetable stock powder and use 1/2 orange.
2. Add the marinate to the shrimps and mix. Leave marinate for at least 1 hour.
3. After 1 to 2 hours in a pan with little bit oil add the onion finely choppen and fry until start changing color, then add the shrimps and fry for some minutes not too much time because it will turn small, in some minutes and add the springs coriander finely chopped and springs chives finely chopped, mix and add catsup.
 4.Once ready, mix the tomato and add mayonnaise if you like, you can leave only with catsup.. Taste really good.
5. Fill the avocado and enjoy with cookies or with rice. Also you can cut the avocado in little cubes and mix with the shrimps. Or if you cant get avocado you can eat only the shrimps in spaghetti or only with cookies.
If you prefer the shrimps with parsley or coriander dressing.
1.In the mixer add 5 to 6 springs of parsley (You can use also coriander), 130 gr of yogurt, 1/4 teaspoon of paprika powder, 1/4 teaspoon of vegetable stock powder and juice of 1/2 orange and mix.
2.In the pan add bit of oil and add the onion in cubes, fry until start to change color and add the shrimps, fry for some minutes and add the coriander or chopped parsley and the chives finely chopped, remove from heat.
3. Add the tomato and the parsley dressing and mix If you like you can add bit of cream, but just with yogurt also taste amazing.
4. Fill the avocados or also you can cut the avocados in cubes and add to the shrimps, it will be also delicious..
